Budget Meals for Summer

$100 a week for five people

This budget recipe plan is designed for a family of five living mainly on food stamps. You should be able to get all the food needed for this plan for about $100 a week, shopping at Walmart or discount grocery stores, or even at regular grocery stores. This budget won't stretch to organic or farmer's market food unless your local farmer's market has a special program for food stamp recipients. But this plan does allow for at least five servings of fruits and vegetables a day, and a lot of whole grains, and some fish. There is very little meat, but the kids get milk with every meal, and with their snacks too.


If you're eating on this budget, the problem with summer is that the kids don't have school and you have to get all of their meals. If that's the case for you, we've tried to propose a budget that will still work for you anyway. For breakfast, if you get tired of oatmeal and berries you've picked, make bagels and eat them toasted with cream cheese or butter.


Peanut butter and jelly sandwiches on whole wheat bread, and an apple, on some days, and the leftovers of the week's dinners, on other days, are still good choices for lunches. Once or twice a week, you could have tuna fish sandwiches instead. All of these leftovers can be microwaved to heat them up. If there aren't enough leftovers, fill up on potato salad, with homemade mayonnaise.

On Sunday it's nice to have a hot lunch of French toast with sliced peaches.


For an afternoon snack, in the summer you can do peach ice or raspberry ice, or just fresh fruit - first apricots, then peaches, then plums, and finally slices of melon. Or, make corn chips or crackers and have them with salsa or guacamole. Skip the glass of milk with snack - water is better for everyone when it's hot, or make iced tea with a little lemon in it (but don't add sugar).


Each of these dinners corresponds to a recipe here on Gevirts. All but the stuffed zucchini can be made in an hour, and most of them take only half an hour. If you don't get home from work until 6, this will mean that you don't eat until 7 or 7:30, but that will work out fine for you.
