You can make a sweet potato pie at home, to find out more about sweet potatoes. Start by peeling 3 medium-sized red garnet sweet potatoes (they might call them yams at the store). Use a very sharp knife to cut up the sweet potatoes into smaller chunks (quarters or eighths). Put the chunks of sweet potato into a saucepan full of water and bring the water to a boil. Boil the potatoes in the water until they are soft and you can easily poke a fork through them. It should take about ten minutes.

Now preheat the oven to 425 degrees Fahrenheit. Pour the water and potatoes into a colander to drain them. Pour the sweet potato chunks into a bowl and mash them into a paste. Add half a cup of sugar, half a cup of brown sugar, four eggs, about half a cup of heavy whipping cream, half a teaspoon of salt, and a pinch or two of pepper, cinnamon, curry powder, ginger, and allspice (or create your own combination of spices!).

Mix well and pour into a regular unbaked pie crust. Bake on a rack in the middle of the oven at 425 degrees about 40 minutes or until a toothpick poked into the center comes out clean.
