Inside the stores, there was just one plain room, with a loft on top sometimes to store extra inventory.

Later on, in the Middle Ages, people built new tall medieval houses on top of some of the shops. You can see the Gothic style windows on the upper floors, and that the upper floors are built of stone, not brick.

The Architecture of the Roman Empire: An Introductory Study, by William MacDonald (1982). Actually not so introductory, but it's got great illustrations that really make the building techniques clear.

Roman Imperial Architecture, by J. B. Ward-Perkins (1992). A more detailed textbook, and harder going.
